About Us

Mad Chef Craft Brewing Inc. is a newly opened brew pub in East Petersburg owned by Greg Kendig and Francisco Ramirez.

Their vision was to create a space where the local community could enjoy high quality, craft-brewed beer and simple but elegant food in a relaxed environment. Locally grown products are used as often as possible and highlights our menu selections. Greg and Francisco believe that their niche, and what will set them apart, is Francisco’s ability to “Insanely combine the culinary arts and craft brewing” to deliver high quality, well balanced and flavorful beer.

A little about us:

Francisco currently resides in New Holland, PA and has over 10 years’ experience in the food service industry. He is a 2006 graduate of the Culinary Institute of America in Hyde Park, NY and he has a B.S. degree in Business Administration/Finance from the University of Puerto Rico. He has been home brewing for 6 years. Francisco is an extraordinary chef with a gift for flavors and balance. This gift has translated directly into his brewing, for which he has been recognized with several awards at local home brewing competitions. These include: Hop Stew Pale Ale, gold medal in its category with a combined total score of 46 out of 50 points and second place best of show at the Iron Hill/ Lancaster homebrew 2014 competition; Pumpkin Ale, third place at the Lancaster Brewer’s club 2013 competition and South of the Border Porter, Chocolate Mexican Porter, 2nd place people’s choice award at the 2014 Home Brew harvest competition at the Brewery at Hershey. Together we have perfected nearly 50 recipes across a wide range of beer styles.

Greg was born and raised in Lancaster County and has 27 years of manufacturing experience – 15 years in the building products industry (14 of those years with Armstrong World Industries) and 12 years in the bottled water industry (7 years as plant manager at the Crystal Springs plant in Brownstown). He has been home brewing for over 10 years. He has an A.S. degree in Computer Science from Penn State York Campus and a B.S. degree in Information Systems from Elizabethtown College. In addition to running the day to day business activities of Mad Chef, Greg also provides logistics and operations management consulting services as an employee of STR Resource to clients across the country.
